Smoking Tuna Bellies

I went out and nailed 15 albacore yesterday fishing out of M/V "Solo"! Woo Hoo! I didn't smoke any tuna bellies last year, thought I'd give it a try this year. Looking at recipes on line it looks like a brine isn't recommended. Any one with tuna experience have any suggestions? Thanks.... Any jokes are appreciated as well so let er rip! Yee Haw!

I used to inject them with teriyaki before smoke. Keep the temp as low as you can.

LOL I've got a couple of lil chiefs... they hardly get warm enough to melt butter! LOL Not a problem there! Cool on the inject, Robyn likes that idea.

Here's an interesting one I came across:
WILD Albacore Tuna Ceviche

Ingredients


We used about 1 pound tuna, need to cut up smaller cubes


4 Limes, juiced (used 3 limes and ½ lemon)

5 Sprigs Cilantro, chopped

1 Roma tomato, diced

1 Shallot, diced (used red onion and green onion)

1 Ripe avocado, diced

1 Ripe mango

1 Small serrano chili, thinly sliced (can also use some jalapeno w/o seeds and ½ small Serrano chili, thinly sliced)

Dash Salt & Pepper


Instructions:

Combine lime juice, albacore tuna, shallots, and serrano chili in non-reactive bowl (i.e. glass). Cover and refrigerate

for 2-5 hours with small pieces maybe 30-60 mins would do). Remove from fridge immediately prior to serving. Add diced tomato, avocado, mango,

cilantro, and salt & pepper to taste.


Serve with tortilla chips.

I got a great gift. A new smoker. Its a step up from the Lil Chief. Its a Cookmaster by Masterbuilt. Im trying my first Chinook in it to try it out. I had a friend fishing Tofino. He gave me his salmon from last season. We'll see how it turns out.

Nice, I think that's what Sickboy...... bayer has been using. I can't seem to get away from the big chief. Maybe my next one will be a Bodobuilt...

Aye my masterbuilt is excellent value for the buck. The only thing I don't like about the up right smokers regardless of the brand I find them back breaking bending down getting things out to texas crutch, check temps etc.

Also the WILD Albacore Tuna Ceviche Mark posted is frigging superb!! I would like a little more kick myself so maybe add one or two more peppers. Both me and the misses don't like mango but loved it in this.
